Description We have an excellent opportunity for an innovative and proven Head of Food Operations/Development Chef to work with this fast-growing food service based in London. The head of food operations/development chef will be responsible for all of the menu concepts for their fresh food business. This position requires dedication and a passionate approach to ensure the quality, standard and consistency of the food service is produced in their production kitchens. The head of food operations/development chef will be based in their main central production kitchen however you will travel to their various sites to review the food service and implement changes where required. This role is best suited for a group or company development chef from a high street branded restaurant group.
Responsibilities for the Head of Food Operations/Development Chef;
To develop recipes and dishes to this very busy multi-million pound food service operation and developing an international product offering that is innovative and surpasses the current food trends
A detailed understanding of procuring and use of sustainable foods and products is key to the position
Managing all areas of the new product process from inception to rolling out in each kitchen in London, including full specs of each recipe and dish
Responsible for managing all aspects of a large budget; forecasting, labour costs, production run time, recipe preparation time, wastage, portion control, inventory and stock rotation, etc
This is a hands-on role, working in the production kitchen will be required
Responsible for the promotion and marketing of the brand and working with key individuals to ensure the continued high profile of the company is maintained
To provide strategy and innovation in line with commercial food and menu planning to enhance the Companys profile
Working closely with the head chefs at each site to ensure high quality of product being delivered to the client and training where required
Attend meetings as required by senior management and travel to each location as and when required
Adhering to all company policies and standards to ensure the highest performance and quality of food and service at this site
Responsible for driving compliance of Health, Safety, Food Hygiene and COSHH regulations
Qualifications and experience for the Head of Food Operations/Development Chef:
Catering qualifications NVQ 1 and 2 or equivalent
Intermediate Food Hygiene and H&S certificates
Previous experience as a development chef within a high profile branded environment
Successfully overseeing a skilled and non-skilled team and/or multi-site operation
Experience with training cooks and chefs within a production environment
Proven experience with writing and developing recipes for an international menu
Excellent knowledge of working to a budget and achieving the GP for a production kitchen
Passionate about food and excellent customer service skills
Excellent communication, IT skills and presentation are essential for this high level position
